The organic bits of Grievous are a race called Kaleesh, according to the official guides. And his helmet is supposed to be a replication of a Kaleesh warrior mask made of bone, but its shape was inspired by the nozzle of a soap bottle. (Maybe the Kaleesh homeworld is a planet made of different kinds of soap, and the warrior tribes go out and fight each other for it rather than just trading some Ivory for some Tide.)

And for those reading along, our investigation into Dug facial structure---OK, we just freeze-framed a picture of Sebulba's face so we could compare his eyes to Grievous'---looks promising.
